Ingredients:


1 cup quinoa, rinsed


2 cups water or vegetable broth


1 avocado, diced


1 cucumber, diced


1 red bell pepper, diced


1 cup cherry tomatoes, halved


¼ cup red onion, finely chopped


¼ cup fresh parsley, chopped


¼ cup feta cheese (optional)


2 tbsp olive oil


1 lemon, juiced


1 clove garlic, minced


Salt and pepper to taste



Instructions:


1. Cook the quinoa:


In a medium pot, combine quinoa and water or broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until the quinoa has absorbed the liquid. Fluff with a fork and let cool.




2. Prepare the vegetables:


While the quinoa cools, chop the avocado, cucumber, bell pepper, cherry tomatoes, and red onion.




3. Make the dressing:


In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.




4. Combine everything:


In a large bowl, mix the cooked quinoa with the vegetables. Add the chopped parsley and feta if using.




5. Dress and serve:


Pour the lemon vinaigrette over the salad and toss gently to combine. Serve immediately or chill for a refreshing, cold salad.
